Red Lobster Fettuccine Dupe

Let’s be honest, jarred alfredo sauce should be a blast from the past in 2020. I’ve tried so many different ways to create alfredo sauce and all of them have such personalities of their own. Who in the hell thought to add cream cheese? You’re amazing, honestly. However, this duplication of Red Lobster’s famous shrimp fettuccine pasta has to be the simplest, fool-proof method.  My recipe for alfredo sauce is very simple, freshly minced garlic,  butter, heavy cream, and freshly-grated italian cheese. This recipe has become my favorite because it can be remixed with your choice of seasonings, veggies, protein, and even pasta. I also think it is impossible to ruin- if you run across any problems, we should probably discuss some things! Wondering what makes this pasta similar to Red Lobster’s? The recipe calls for a shrimp scampi component that’ll enhance the seafood’s taste and alfredo sauce. You can either cook the shrimp in a skillet or in the oven with your favorite baking dish (my prefered method)

 

 

Ingredients

 
 5 tbsp Butter
 4 tbsp Minced Garlic
 1 lb Raw Shrimp, peeled
 2 tbsp Lemon Juice
  cup Dry, white wine or chicken broth
 4 cups Heavy Cream
 1 ½ cups Italian Cheese (Parmesan, Mozzarella, Italian Blend)
 ½ tsp Oregano
 ½ tsp Basil
 8 oz Pasta Fettuccine, cooked

What to Do

 

1. Heat 3 tbsp of butter in a large skillet over a medium-high heat, add garlic and turn the heat to medium-low. Add shrimp, white wine or broth, season with salt, pepper, & lemon juice and cook until they are opaque. Or add shrimp, butter, seasonings, and lemon juice in a baking dish and bake on 350 F until opaque or ten minutes.
 
2. Remove shrimp from skillet and reserve the leftover liquid in the pan, this will enhance our alfredo sauce.
 
3. Add the leftover tbsp of butter, minced garlic, and leftover fat from the cooked shrimp to a saucepan. Cook on medium heat for 3 minutes.
 
4. Reduce the heat to low and add cream while constantly stirring, next add the cheese and stir until it has melted and incorporated in the sauce. 
 
5. Continue to stir the sauce and allow it to simmer and thicken. Add shrimp, oregano, basil, and pasta to the sauce and serve warm topped with any additional parmesan cheese.
