30-Minute Beef and Broccoli

This week I had the pleasure of cooking this simple beef and broccoli recipe on Instagram Live with The City of Detroit this week. Beef and Broccoli was one of my favorite dishes to cook in undergrad- especially when I couldn’t drive three hours to my favorite Chinese takeout restaurant back home in Detroit. This recipe is super easy to make and requires ingredients that are easier to find during our quarantine. If you are vegetarian, I would suggest making this dish with a variety of mushrooms instead of beef. I made it this way for my meatless friends in college and it was always a hit!

Beef and Broccoli
Instructions
  1. Heat the oil in a pan over medium heat for about 3 minutes. Add onions and garlic to the pan and cook until translucent or for up to 4 minutes. I like to add anything else I have left in the fridge as well such as green onions, peppers, and even mushrooms- let these cook until tender.
  2. Toss the sliced beef in a large bowl with corn starch and salt and pepper (to taste, or about 2tsp of each for each pound of meat)
  3. Add beef and cook until it has browned, be sure to stir frequently.
  4. Next, add the broccoli and garlic to the pan, and stir. Add the beef broth and let simmer until the broccoli is cooked tender or about 5 minutes. Be sure to stir occasionally. The broth will also collect all of the brown bits and seasoning at the bottom of the pan adding more flavor.
  5. While waiting for the broccoli to cook, mix all of the ingredients for the sauce in a small bowl.
  6. Add the sauce to the pan and stir until completely combined. Let the beef and broccoli simmer on low for 5 minutes, so the sauce thickens.
  7. Serve beef and broccoli over cooked rice, noodles, or alone. Tag me in any pictures on instagram at @elle .thefoodie and #EatUp!
Recipe Notes
  1. I always like to tenderize my beef before seasoning and cooking. To do so, I take some parchment paper or cling wrap and place my beef in between one long piece folded in half or two shorter pieces. I then take my rolling pin used for baking and pound the meat. You can also use a meat pounder or tenderizer.
  2. If you find that the stir fry doesn't have enough sauce, add more soy sauce, brown sugar, and cornstarch. I found that adding teriyaki sauce prevents some of the saltiness that usually comes from soy sauce.
