Caramel Apple Hand Pies


I grew up with strong Southern roots which means almost everyone can cook and we eat apple or sweet potato pie, no exceptions. One Thanksgiving, my grandmother and I decided to go out of our element and buy a frozen pumpkin pie to see what the hype was all about. Since it was zero degrees outside, we decided to leave our Midwest Fall Delicacy in the car to stay cold while we prepared dinner and set up the holiday china. Long story short, the pie melted in the car leaving us to prepare our usual desserts and drive around until the Spring months with our car smelling like Pumpkin Spice.
Moral of the story, Apple Pie is America’s favorite pie for a reason. Don’t believe the hype!

These apple pie cookies are adapted from my grandma’s apple pie or smothered apples recipe. If you’re fancy you can make your own pied dough but I find frozen pie dough rolls very easy to use. The caramel sauce and brown sugar cinnamon sprinkled on top complete all of my favorite Fall favorites. Serve with vanilla bean ice cream for a fun time!

Caramel Apple Hand Pies

Sweet mini apple pies with a caramel drizzle sure to bring on the apple orchard and fall vibes. Serve with a cold scoop of vanilla ice cream.

  • 6 Medium Baking Apples peeled and sliced
  • 1/2 Cup Sugar
  • 1 to 2 Tsp Cinnamon
  • 1/2 Cup Brown Sugar
  • 2 Tsp Nutmeg
  • 1 Tsp Allspice
  • 2 Tbsp Vanilla Extract
  • 1 Box Pillsbury Roll-Out Pie Crusts
  • 1 Small Jar Caramel Sauce
  • 5 Tbsp Butter
  • 1 Tbsp Lemon Juice
  • 5 Tbsp Water
  • 1 Tbsp Cornstarch
  • 1 Large Egg for egg wash


  • Preheat oven to 350 degrees F. Peel, core, and cut apples into a medium bowl. Evenly coat apple chunks with lemon juice to prevent browning.
  • In a medium saucepan, melt butter on medium heat. Once melted, add apple chunks, nutmeg, allspice, cinnamon, sugar and brown sugar. Cook on medium heat for 3 minutes or until sugar has melted down.
  • In a small bowl, mix water and cornstarch together until lumps are gone. Add mixture to apple filling and mix gently to prevent apples from mushing. The filling will thicken from starch. Turn off heat and let filling cool while preparing pie crust.
  • Roll out the first pie crust on a floured surface. With a spatula, add an even layer of caramel sauce on the crust. Layer the pie filling on top of the caramel layer. Optional: top filling layer with more caramel or cinnamon.
  • Roll out the second pie crust matching it side by side with the first one. With a knife, cut the second pie crust into 1/2 inch vertical strips. Create a lattice design over the first pie crust to create the popular apple pie design.
  • With the cookie cutter, cut out as many full circles of the prepared apple pie to create cookie shapes. Place cutouts on a coated baking sheet. Brush egg wash (1 part egg and 1 part water) on top of cookies. If desired, sprinkle cookies with white sugar and cinnamon.
  • Bake in the oven for 20-25 minutes or until the top crust is golden. Tag #MillennialMeetsStove in your pics!
